Kampot Pepper
There's pepper, and then there's Kampot pepper!
Kampot pepper is considered one of the world's finest peppers. Its unique taste and intense aroma set it apart from ordinary pepper. It is only produced in a protected area of the province of Kampot, located on the southern coast of Cambodia.
Pepper cultivation
In Kampot, the pepper plant grows in limy soil and benefits from a humid and warm coastal climate, an ideal combination for the plant . It's this particular climate that gives Kampot pepper its unique flavor!
Growing pepper requires a lot of hard work and experience. It is grown using traditional methods, entirely by hand and without the use of artificial fertilizers or pesticides. A pepper plant can consume up to 5 litres of water a day during the dry season. This water comes exclusively from rainwater stored in ponds close to the plantations.
All pepper varieties are obtained from the same plant, and the specificity of each variety depends on the ripening stage of the fruits and the production process. As fruits from the same pepper stem can ripen at different rates, they must be selected and harvested by hand at the right time.
