Kampot white pepper
As with Kampot red peppercorns, when fully ripe, they are harvested and de-stemmed by hand. They are then immersed in water until their epicarp is removed, a process that makes them so distinctive from black and red peppercorns, and explains why white peppercorns have a smoother appearance than other peppercorns. The peppercorns are then dried in the sun.
This is when the true aroma of white peppercorns comes to the fore: fresh, light, herbaceous, powerful yet delicate.
